Low Carb Mince Casserole

INGREDIENTS

500g Beef MinceĀ https://trewayfarm.co.uk/product/beef-mince/

X1 Can Chopped Tomatoes

X1 Tablespoon Tomato Puree

250g Pack Cream Cheese

125g Grated Cheese – I like to use a cheddar/mozarella mix

Spices To Your Taste – I like to use cinnamon, cumin, garlic and smoked paprika

Low carb mince Casserole – method

1, Brown the mince over a medium/high heat

2, Once browned add your favourite spices, stir in and then allow to cook through for a couple of minutes.

3, Add the chopped tomatoes and puree, stir well and simmer until the tomato liquid has reduced by half.

4, Use a spoon to dollop the cream cheese over the top then sprinkle over the grated cheese.

5, Grill for a few minutes until the grated cheese has melted.

Tips:

  • Try different combinations of spices to mix up this simple dish to your tatse. Think mexican vibes or maybe go down a herby italian route.
  • I always pop the pan in the centre of the table and let everyone dig in!
