Grass Fed Beef Short Rib Ragu With Papadelle Pasta
INGREDIENTS
⭐️ X3 Grass Fed Beef Short Ribs https://trewayfarm.co.uk/product/short-ribs/
⭐️1 Tablespoon Olive Oil
⭐️x2 Onions Diced
⭐️x4 Carrots Diced
⭐️X3 Cloves Garlic Chopped
⭐️X2 Tablespoons Tomato Puree
⭐️480ml Red Wine
⭐️1 Can Chopped Tomatoes
⭐️240ml Beef Stock
⭐️1 Tablespoon Dijon Mustard
⭐️ x2 Bay Leaves
⭐️ x6 Sprigs Thyme
⭐️ 900g Papadelle or Tagliatelle Pasta
⭐️Grated Parmesan to Garnish
⭐️ Salt and Pepper
Method
1, Pat the short ribs with paper towel to remove any moisture. Then season generously with salt and pepper.
2, Add the olive oil to a large casserole dish and place on a high heat on the hob. Then sear the short ribs until they are well browned on all sides.
3, Remove the short ribs from the pan and place to one side. Then add the onions, garlic and carrots to the pan sauce for around 5 mins or until softened.
4, Add the tomato puree to the veg and saute for another couple of minutes.
5, Pour in the wine, mix well and make sure to scrape the sides of the pan. Then allow to bubble and then reduce by half. (10-15mins)
6, Add the chopped tomatoes, beef stock, bay leaves, mustard and thyme to the pan. Stir to combine.
7, Add the short ribs to the pan and make sure that they are submerged. Bring to the boil then cover and pop in the oven at 180 degrees for 2.5 hrs or until the meat is falling off the bone. Stir regularly and add more water as necessary. Skim excess fat off the top as required.
8, Once the meat is falling off the bones carefully lift out the short ribs and place on a chopping board. Remove the bones and then shred the meat using two forks. Discard the bay leaves and thyme stalks.
9, Place the meat back in the pan, stir well, season with salt and pepper. Then allow to simmer for 10 minutes while the pasta cooks.
10, Cook the pasta to the packet instructions.
11, Serve the short rib ragu with the pappardelle and garnish generously with parmesan.
Tips:
⭐️ I like to serve the pasta and ragu in a large serving bowl which I place in the centre of the table and let everyone dig in!
⭐️ The ragu can be made in advance, just reheat on a gentle heat while your pasta is cooking.
