Thai Turkey Noodle Soup

Creamy Thai Turkey and Coconut Noodle Soup

INGREDIENTS

1 Tbs Cooking Oil – I always use beef dripping for all cooking

X1 Medium Onion Chopped

X4 Cloves Garlic – Minced

X4 Heaped Tbs Thai Red Curry Paste

X1 Litre Homemade Turkey Stock or Shop Bought Chicken Stock

Juice of Half A Lime

Cooked Turkey Torn Into Strips

150g Rice Noodles

X1 Can Full Fat Coconut Milk

Handful of Fresh Coriander

Handful Chopped Spring Onions

Handful Chopped Red Chillis – if desired

Soy Sauce

Salt and Pepper

Thai Crackers And Lime Wedges To Serve

Method

1, Sweat the onions in the oil in a very large saucepan for 5 minutes over a medium heat.

2, Add the garlic and curry paste then cook for 1 minutes.

3, Stir in the turkey stock, lime juice, turkey and rice noodles then increase the heat to high and bring to the boil.

4, Reduce the heat to medium then sir in the coconut milk and simmer for 10 minutes.

5, Stir in the coriander, season with salt and pepper and add a splash of soy sauce to taste. Sprinkle over the spring onions and chillies.

6, Serve with lime wedges and if you are like us a handful of thai crackers!
