Charlie’s Creamy Cheesy Leeks

INGREDIENTS

800g Leeks

2 Garlic Cloves

Butter

6 Sprigs of Fresh Thyme (or use dried)

100g Mature Cheddar Cheese

Salt and Pepper

200ml Double Cream

 

method

 

1, Preheat the oven to 200C

2, Peel back the outer leaves of the leeks and chop off the ends. Then slice the leeks length ways and then roughly chop.

3, Put the leeks in a sieve and rinse to remove any soil and grit.

4, Peel and finely slice the garlic.

5, Remove the thyme leaves from the stalks and discard the stalks.

6, Put the butter in a large pan and add the garlic, cook over a medium heat. As the garlic takes on some colour add the leeks and thyme. Stir well.

7, Cook the leeks for around 10 minutes or until the leeks have softened. Stir regularly.

8, While the leeks are cooking grate the cheddar.

9, Remove the leeks from the heat and pour in the cream and three quarters of the grated cheese. Stir well until the cheese has melted.

10, Season with salt and pepper to taste.

11, Carefully pour the leeks into an ovenproof dish that will give you a layer of leeks about 2.5cm deep. Sprinkle over the rest of the cheese.

12, Bake in the oven for 20 minutes until golden and bubbling!
