
Beef Truffles With Crushed New Potatoes and Greens
INGREDIENTS
⭐️ 750g New Potatoes
⭐️ X4 BBQ Beef Truffles
⭐️ Greens of Your Choice
⭐️ Handful Rosemary Springs
⭐️ Olive Oil
⭐️ Salt and Pepper
Method
1, Preheat oven at 180 degrees
2, Boil the potatoes in slightly salted water for 10 minutes or until soft.
3, Place the beef truffles on an oven tray with greaseproof paper and pop in the oven for 25 mins.
4, Drain the potatoes and tip onto a baking tray. Gently crush the potatoes with the back of a fork. Drizzle with olive oil then season generously with salt and pepper. Sprinkle over the rosemary sprigs and roast in the oven for 20 mins or until golden and crispy.
5, Meanwhile cook your greens of choice.
Tips:
⭐️ Allow one truffle per person.
⭐️ The recipe works well with the same timings for the Peppercorn Beef Bombs and the Mushroom Beef Bombs.
⭐️ If you prefer you can simply boil the new potatoes and serve with butter if you don’t want to do the final step of roasting.
